🍰 Fresh Lime Yoghurt Ice Cream

Ingredients
- 1 vanilla pod
- 750 g yogurt (3.5% fat)
- 40 g birch sugar (2 tbsp)
- 0.5 organic lime
- 1 sheet white gelatin
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the tiny black seeds (the pulp) from the pod.
- 3. Add the vanilla pulp and the yoghurt to a bowl.
- 4. Add the birch sugar.
- 5. Stir the mixture until the sugar is completely dissolved.
- 6. Rinse the lime under hot water.
- 7. Dry the lime with a cloth.
- 8. Squeeze out one tablespoon of lime juice.
- 9. Optionally peel off a few thin strips of zest if you need them for garnish.
- 10. Soak the gelatine in cold water.
- 11. Warm the lime juice in a small saucepan.
- 12. Squeeze the soaked gelatine well.
- 13. Dissolve the gelatine in the warm lime juice while stirring.
- 14. Mix the gelatine mixture with three tablespoons of yoghurt.
- 15. Stir this mixture into the remaining yoghurt.
- 16. Freeze the mixture in the ice cream maker.
- 17. Store the ice cream in the freezer until serving.
- 18. Garnish the ice cream with lime zest if desired.
