🍽️ Baked Scallops with Crispy Breadcrumbs

Ingredients
- 3 slices whole wheat toast
- 125 ml milk (3.5% fat)
- 20 fresh scallops
- 1 shallot
- 1 tbsp butter
- 125 ml vegetable broth
- salt
- white pepper
- 1 tbsp lemon juice
- 5 tbsp sour cream
- 5 tbsp whole wheat breadcrumbs
- 1 tbsp lemon zest
Instructions
- 1. Remove the crusts from the whole wheat toast slices.
- 2. Roughly chop the toast bread into pieces.
- 3. Place the bread pieces into the milk.
- 4. Let the bread soak in the milk.
- 5. Rinse the scallops under running water.
- 6. Run a small knife along the edge of the shell.
- 7. Cut through the adductor muscle.
- 8. Lift the shell edge to open the scallop.
- 9. Separate the white meat from the shell.
- 10. Separate the orange-red roe (corail) from the meat.
- 11. Remove the gray edges from the scallop meat.
- 12. Rinse the meat thoroughly several times.
- 13. Pat the meat dry with a cloth.
- 14. Clean the empty scallop shells.
- 15. Peel the shallots.
- 16. Dice the shallots into small cubes.
- 17. Heat butter in a pan.
- 18. Sauté the shallot cubes until translucent.
- 19. Deglaze the pan with vegetable broth.
- 20. Squeeze the soaked bread.
- 21. Add the bread to the broth in the pan.
- 22. Let the mixture simmer briefly.
- 23. Season with salt.
- 24. Season with pepper.
- 25. Add lemon juice.
- 26. Reduce the heat to low.
- 27. Cover the pan with a lid.
- 28. Simmer the mixture for approx. 15 minutes.
- 29. Stir in the sour cream.
- 30. Add the scallop meat.
- 31. Cook the meat for approx. 5 minutes.
- 32. Remove the pan from the heat.
- 33. Fold in the roe (corail).
- 34. Place the cleaned scallop halves on a baking sheet.
- 35. Pour the scallops along with the liquid.
- 36. Sprinkle the scallops with whole wheat breadcrumbs.
- 37. Sprinkle the scallops with lemon zest.
- 38. Preheat the oven to 250 °C.
- 39. Set the fan to 220 °C.
- 40. Set the gas oven to the highest level (4 or 5).
- 41. Gratin the scallops for approx. 5-8 minutes.
- 42. Remove the tray from the oven.
- 43. Serve the baked scallops.
