  1. 1. Remove the crusts from the whole wheat toast slices.
  2. 2. Roughly chop the toast bread into pieces.
  3. 3. Place the bread pieces into the milk.
  4. 4. Let the bread soak in the milk.
  5. 5. Rinse the scallops under running water.
  6. 6. Run a small knife along the edge of the shell.
  7. 7. Cut through the adductor muscle.
  8. 8. Lift the shell edge to open the scallop.
  9. 9. Separate the white meat from the shell.
  10. 10. Separate the orange-red roe (corail) from the meat.
  11. 11. Remove the gray edges from the scallop meat.
  12. 12. Rinse the meat thoroughly several times.
  13. 13. Pat the meat dry with a cloth.
  14. 14. Clean the empty scallop shells.
  15. 15. Peel the shallots.
  16. 16. Dice the shallots into small cubes.
  17. 17. Heat butter in a pan.
  18. 18. Sauté the shallot cubes until translucent.
  19. 19. Deglaze the pan with vegetable broth.
  20. 20. Squeeze the soaked bread.
  21. 21. Add the bread to the broth in the pan.
  22. 22. Let the mixture simmer briefly.
  23. 23. Season with salt.
  24. 24. Season with pepper.
  25. 25. Add lemon juice.
  26. 26. Reduce the heat to low.
  27. 27. Cover the pan with a lid.
  28. 28. Simmer the mixture for approx. 15 minutes.
  29. 29. Stir in the sour cream.
  30. 30. Add the scallop meat.
  31. 31. Cook the meat for approx. 5 minutes.
  32. 32. Remove the pan from the heat.
  33. 33. Fold in the roe (corail).
  34. 34. Place the cleaned scallop halves on a baking sheet.
  35. 35. Pour the scallops along with the liquid.
  36. 36. Sprinkle the scallops with whole wheat breadcrumbs.
  37. 37. Sprinkle the scallops with lemon zest.
  38. 38. Preheat the oven to 250 °C.
  39. 39. Set the fan to 220 °C.
  40. 40. Set the gas oven to the highest level (4 or 5).
  41. 41. Gratin the scallops for approx. 5-8 minutes.
  42. 42. Remove the tray from the oven.
  43. 43. Serve the baked scallops.
