  1. 1. Bring water to a boil in a pot and add salt.
  2. 2. Place the scallops into the boiling salted water.
  3. 3. Remove the pot from the heat immediately.
  4. 4. Let the scallops steep in the hot water for 5 minutes.
  5. 5. Remove the scallops from the water.
  6. 6. Allow the scallops to cool down.
  7. 7. Slice the cooled scallops into thin pieces.
  8. 8. Add lemon juice, olive oil, a pinch of salt, and pepper to a bowl.
  9. 9. Mix the vinaigrette ingredients well together.
  10. 10. Add the scallop slices to the vinaigrette and toss to coat.
  11. 11. Add Creme Fraiche and cream to a separate bowl.
  12. 12. Add oyster sauce to the Creme Fraiche mixture.
  13. 13. Whisk the sauce with a whisk until smooth.
  14. 14. Season the sauce with salt and pepper to taste.
  15. 15. Arrange the marinated scallops decoratively in the center of the plates.
  16. 16. Sprinkle the scallops with fresh chives.
  17. 17. Add a spoonful of the prepared sauce.
  18. 18. Garnish the dish with chervil and serve.
