🍽️ Scallops with Lemon Vinaigrette

Ingredients
- 500 g scallop meat (without coral)
- 4 tbsp lemon juice
- 4 tbsp olive oil
- salt
- pepper
- 2 tbsp crème fraîche
- 4 tbsp whipping cream
- 1 tsp oyster sauce (Asian market)
- 1 tbsp chive rings
- chervil leaves
Instructions
- 1. Bring water to a boil in a pot and add salt.
- 2. Place the scallops into the boiling salted water.
- 3. Remove the pot from the heat immediately.
- 4. Let the scallops steep in the hot water for 5 minutes.
- 5. Remove the scallops from the water.
- 6. Allow the scallops to cool down.
- 7. Slice the cooled scallops into thin pieces.
- 8. Add lemon juice, olive oil, a pinch of salt, and pepper to a bowl.
- 9. Mix the vinaigrette ingredients well together.
- 10. Add the scallop slices to the vinaigrette and toss to coat.
- 11. Add Creme Fraiche and cream to a separate bowl.
- 12. Add oyster sauce to the Creme Fraiche mixture.
- 13. Whisk the sauce with a whisk until smooth.
- 14. Season the sauce with salt and pepper to taste.
- 15. Arrange the marinated scallops decoratively in the center of the plates.
- 16. Sprinkle the scallops with fresh chives.
- 17. Add a spoonful of the prepared sauce.
- 18. Garnish the dish with chervil and serve.
