🍽️ Pan-seared Scallops on Creamy Mashed Potatoes

Ingredients
- 6 scallops (kitchen-ready)
- 6 slices smoked sausages (to taste)
- 400 g potatoes (mealy cooking)
- 2 tbsp oil
- 3 tbsp butter
- 100 ml milk
- 1 pinch vanilla paste
- sea salt
- 1 tbsp caviar
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Steam the potatoes for about 30 minutes until they are cooked through.
- 3. Peel the cooked potatoes.
- 4. Press the potatoes through a potato ricer.
- 5. Stir the potatoes with cold butter and hot milk to create a creamy mash.
- 6. Season the mash with salt.
- 7. Wash the scallops.
- 8. Pat the scallops dry with a kitchen towel.
- 9. Score a diamond pattern into the scallops.
- 10. Fry the scallops in hot oil for about 2 minutes per side.
- 11. Lightly salt the scallops.
- 12. Heat 1 tablespoon of butter in a separate pan.
- 13. Gently fry the sausage slices in the butter.
- 14. Pipe the mash onto the plates using a piping bag.
- 15. Place the scallops on top of the mash.
- 16. Distribute the salmon roe over the scallops.
- 17. Place the sausage slices next to the mash.
- 18. Drizzle the sausage slices with the vanilla butter.
- 19. Serve the dish immediately.
