  8. 8. Pat the scallops dry with a kitchen towel.
  9. 9. Score a diamond pattern into the scallops.
  10. 10. Fry the scallops in hot oil for about 2 minutes per side.
  11. 11. Lightly salt the scallops.
  12. 12. Heat 1 tablespoon of butter in a separate pan.
  13. 13. Gently fry the sausage slices in the butter.
