🍽️ Pan-seared scallops on crisp apple salad

Ingredients
- 12 Scallops (kitchen-ready)
- 120 g Parma Ham (6 slices)
- 2 Apples
- 3 sprigs Mint
- 2 tbsp Apple cider vinegar
- 1 tsp Honey
- 1 tbsp Lemon juice
- 4 tbsp Olive oil
Instructions
- 1. Rinse the scallops under cold running water.
- 2. Pat the scallops dry with a kitchen towel.
- 3. Halve the ham slices lengthwise.
- 4. Thread three scallops onto each bamboo skewer.
- 5. Wash the first apple thoroughly.
- 6. Core the apple and slice the flesh into very thin rounds.
- 7. Peel the second apple.
- 8. Quarter the peeled apple and remove the core.
- 9. Cut the flesh of the second apple into small sticks.
- 10. Wash the mint.
- 11. Shake the mint dry.
- 12. Finely chop the mint leaves.
- 13. Whisk apple cider vinegar, honey, lemon juice, three tablespoons of oil, and the chopped mint together for the dressing.
- 14. Arrange the thin apple slices decoratively on four plates.
- 15. Place the apple sticks on top of the slices.
- 16. Drizzle some of the dressing over the salad.
- 17. Heat the remaining oil in a frying pan.
- 18. Fry the scallop skewers on each side over low to medium heat for one to two minutes.
- 19. Place the fried scallops on top of the apple salad.
- 20. Pour the remaining dressing over the scallops.
