🍝 Fresh Pasta Salad with Italian Flair

Ingredients
- 500 g pasta (e.g. bow-tie)
- salt
- 1 cucumber
- 2 yellow bell peppers
- 250 g cherry tomatoes
- 1 bunch basil
- 100 g black olives (pitted)
- 40 g shaved parmesan
- 2 tbsp pine nuts
- 3 sprigs fresh thyme
- 1 garlic clove
- 10 sun-dried tomatoes in oil
- 4 tbsp olive oil
- salt
- 1 dried chili pepper
- 2 tbsp freshly grated parmesan
- 2 tbsp white wine vinegar
- salt
- pepper
Instructions
- 1. Fill a large pot with water and bring it to a boil.
- 2. Season the water generously with salt.
- 3. Cook the pasta in it according to the package instructions until al dente.
- 4. Reserve a small amount of the cooking water for the dressing.
- 5. Drain the pasta through a sieve.
- 6. Rinse the pasta briefly with cold water.
- 7. Let the pasta cool down to lukewarm.
- 8. Peel the cucumber.
- 9. Cut the cucumber lengthwise into two halves.
- 10. Scrape out the seeds from the cucumber halves.
- 11. Cut the cucumber halves into thin half-moons.
- 12. Remove the stems, seeds, and membranes from the bell peppers.
- 13. Wash the bell peppers.
- 14. Cut the bell peppers into quarters.
- 15. Cut the pepper quarters into thin strips.
- 16. Wash the tomatoes.
- 17. Cut the tomatoes into quarters.
- 18. Wash the basil.
- 19. Shake the basil dry.
- 20. Finely chop the basil leaves.
- 21. Toast the pine nuts in a pan without fat.
- 22. Let the pine nuts cool down.
- 23. Wash the thyme.
- 24. Strip the thyme leaves from the stems.
- 25. Finely chop the thyme.
- 26. Peel the garlic.
- 27. Chop the garlic.
- 28. Chop the dried tomatoes.
- 29. Place the pine nuts, garlic, dried tomatoes, and oil into a blender.
- 30. Add a pinch of salt and the crumbled chili pepper.
- 31. Blend the mixture into a fine paste.
- 32. Stir in the grated Parmesan cheese.
- 33. Stir in the chopped thyme.
- 34. Whisk the mixture with the vinegar.
- 35. Thin the dressing with a little pasta cooking water.
- 36. Season the dressing with salt and pepper.
- 37. Mix the cooled pasta with the prepared salad ingredients.
- 38. Pour the dressing over the salad.
- 39. Let the salad marinate covered for one hour.
- 40. Taste the salad again before serving.
- 41. Sprinkle the salad with shaved Parmesan cheese.
