🍽️ Gently Simmered Italian Oil Dip Sauce

Ingredients
- 10 anchovies (in oil)
- 6 garlic cloves
- 130 ml olive oil
- 2 tbsp butter
Instructions
- 1. Place the anchovies into a fine mesh sieve.
- 2. Rinse the anchovies under cold running water to reduce the strong saltiness.
- 3. Pat the anchovies completely dry with a kitchen towel or paper napkin.
- 4. Finely chop the dry anchovies.
- 5. Peel the garlic cloves.
- 6. Slice the garlic into thin slices or small pieces.
- 7. Add the chopped anchovies and the garlic to a small saucepan along with the oil.
- 8. Place the saucepan on a very low heat setting.
- 9. Let the mixture simmer gently over low heat for 25 to 30 minutes.
- 10. Ensure that the anchovies and garlic do not brown, but only release their flavors.
- 11. Remove the saucepan from the heat briefly or reduce the heat to zero.
- 12. Add the butter to the warm oil mixture.
- 13. Stir until the butter has completely melted and combined with the oil.
- 14. Serve the finished sauce as a dip.
- 15. Serve the sauce alongside fresh ciabatta bread, vegetable sticks, chicory, or shrimp.
