  1. 1. Roughly chop the chocolate.
  2. 2. Place a bowl with the chocolate over a pot of hot, but not boiling water (bain-marie).
  3. 3. Melt the chocolate while stirring.
  4. 4. Remove the bowl from the heat.
  5. 5. Let the chocolate cool down briefly.
  6. 6. Mix the ricotta with the cognac and the powdered sugar.
  7. 7. Stir the still liquid chocolate into the ricotta mixture.
  8. 8. Whip the cream until stiff.
  9. 9. Gently fold the whipped cream into the ricotta-chocolate mixture little by little.
  10. 10. Place the cream in the refrigerator for 1 hour.
  11. 11. Select the fruits and remove any bad spots.
  12. 12. Wash the fruits thoroughly.
  13. 13. Remove stems and seeds (clean).
  14. 14. Halve the strawberries.
  15. 15. Quarter the strawberries, if desired.
  16. 16. Scoop balls (quenelles) from the chilled chocolate cream using a tablespoon.
  17. 17. Place the chocolate cream quenelles on dessert plates.
  18. 18. Garnish the plates with the prepared fruits.
  19. 19. Dust the cream with a little powdered sugar.
  20. 20. Serve the dessert.
