🍰 Creamy Chocolate Ricotta Delight

Ingredients
- 300 g dark chocolate (at least 70 % cocoa content)
- 500 g ricotta
- 20 ml cognac
- 3 tbsp powdered sugar
- 200 ml whipping cream (at least 30 % fat content)
- 100 g raspberries
- 200 g blueberries
- 100 g strawberries
- 2 tbsp powdered sugar (for dusting)
Instructions
- 1. Roughly chop the chocolate.
- 2. Place a bowl with the chocolate over a pot of hot, but not boiling water (bain-marie).
- 3. Melt the chocolate while stirring.
- 4. Remove the bowl from the heat.
- 5. Let the chocolate cool down briefly.
- 6. Mix the ricotta with the cognac and the powdered sugar.
- 7. Stir the still liquid chocolate into the ricotta mixture.
- 8. Whip the cream until stiff.
- 9. Gently fold the whipped cream into the ricotta-chocolate mixture little by little.
- 10. Place the cream in the refrigerator for 1 hour.
- 11. Select the fruits and remove any bad spots.
- 12. Wash the fruits thoroughly.
- 13. Remove stems and seeds (clean).
- 14. Halve the strawberries.
- 15. Quarter the strawberries, if desired.
- 16. Scoop balls (quenelles) from the chilled chocolate cream using a tablespoon.
- 17. Place the chocolate cream quenelles on dessert plates.
- 18. Garnish the plates with the prepared fruits.
- 19. Dust the cream with a little powdered sugar.
- 20. Serve the dessert.
