  1. 1. Slice the bread into thin pieces.
  2. 2. Preheat the oven to 200 degrees Celsius (180 degrees Celsius for fan-assisted or gas mark 3).
  3. 3. Place the bread slices on a baking tray and bake them for about 12 minutes until golden brown in the center of the oven.
  4. 4. Thoroughly rinse the chicken livers under running water.
  5. 5. Remove any membranes or gall bladder remnants from the livers.
  6. 6. Cut the cleaned livers in half.
  7. 7. Wash the apples thoroughly.
  8. 8. Core the apples using a corer.
  9. 9. Slice the apples into approximately 5 millimeter thick slices.
  10. 10. Peel the onions.
  11. 11. Cut the peeled onions into thin rings.
  12. 12. Heat olive oil in a large frying pan.
  13. 13. Sear the chicken liver slices in batches over high heat.
  14. 14. Season the livers briefly with salt and pepper.
  15. 15. Remove the seared livers from the pan and set them aside.
  16. 16. Add the apple slices and onion rings to the hot pan.
  17. 17. Fry the vegetables while stirring constantly for 6 to 8 minutes.
  18. 18. Wash the sage leaves and shake them dry.
  19. 19. Pluck about 8 leaves from the stems.
  20. 20. Chop the sage leaves into coarse pieces.
  21. 21. Add the sage pieces to the apple and onion mixture in the pan.
  22. 22. Pour white wine and balsamic vinegar into the pan.
  23. 23. Bring the sauce to a boil once.
  24. 24. Return the previously removed chicken liver slices to the sauce.
  25. 25. Season everything one last time with salt and pepper.
  26. 26. Simmer the livers in the sauce for 1 minute.
  27. 27. Arrange the baked bread slices on a serving plate.
  28. 28. Place the warm liver and apple mixture on top of the bread slices.
