  1. 1. Peel the carrots and slice them into rounds.
  2. 2. Wash the broccoli and divide it into small florets.
  3. 3. Wash the celery and cut it into bite-sized pieces.
  4. 4. Wash the zucchini, cut it lengthwise into quarters, and then cut into pieces.
  5. 5. Heat the oil in a large pot.
  6. 6. Sauté the prepared vegetables over medium heat for 2 to 3 minutes.
  7. 7. Pour in the broth and bring the soup to a boil.
  8. 8. Drain the beans in a colander.
  9. 9. Add the beans to the soup.
  10. 10. Simmer the soup over low heat for about 10 minutes.
  11. 11. Season the minestrone with salt and pepper to taste.
  12. 12. Serve the soup on plates.
  13. 13. Top the finished minestrone with grated Parmesan cheese.
