🍽️ Irish Potato and Kale Stew

Ingredients
- 400 g floury potatoes
- 200 g sweet potatoes
- salt
- 400 g savoy cabbage
- 60 g butter
- 4 spring onions
- 150 ml milk
- pepper (from the mill)
- nutmeg
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Cut the potatoes into quarters and place them in boiling salted water.
- 3. Cook the potatoes for about 30 minutes until they are tender.
- 4. Drain the water and mash the potatoes finely with a potato masher.
- 5. Let the mashed potatoes steam for a short while.
- 6. Wash the kale and remove the tough stems.
- 7. Cut the kale into thin strips.
- 8. Blanch the kale strips for about 10 minutes in salted water (cook briefly in boiling water).
- 9. Remove the kale with a slotted spoon and let it drain.
- 10. Clean the spring onions and wash them.
- 11. Shake the spring onions dry and slice them into rings.
- 12. Melt half of the butter in a large pot.
- 13. Add the spring onion rings to the pot.
- 14. Sauté the onions until translucent while stirring.
- 15. Pour in the milk and warm it slightly.
- 16. Place the kale, mashed potatoes, and remaining butter into a large bowl.
- 17. Pour the warm milk in gradually and mix everything well.
- 18. Season the stew with salt, pepper, and nutmeg to taste.
