  1. 1. Peel the ginger and garlic cloves.
  2. 2. Puree the ginger, garlic, and rapeseed oil into a smooth paste.
  3. 3. Pat the steaks dry with a kitchen towel.
  4. 4. Rub the steaks thoroughly with the paste.
  5. 5. Let the meat marinate for 2 hours.
  6. 6. Cook the rice noodles in plenty of boiling salted water until al dente.
  7. 7. Drain the noodles and let them drip dry.
  8. 8. Peel the carrots.
  9. 9. Cut the carrots into thin strips using a vegetable peeler or mandoline.
  10. 10. Trim the ends of the snow peas.
  11. 11. Wash the snow peas.
  12. 12. Cut the snow peas diagonally into strips.
  13. 13. Blanch the carrot strips and snow peas in boiling water for 3 minutes (blanching means cooking briefly in boiling water).
  14. 14. Immediately shock the vegetables in cold water to stop the cooking process.
  15. 15. Drain the vegetables.
  16. 16. Combine honey, broth, and both types of soy sauce in a pot.
  17. 17. Stir in the starch.
  18. 18. Bring the mixture to a boil over low heat while stirring constantly.
  19. 19. Remove the pot from the heat.
  20. 20. Let the sauce cool down.
  21. 21. Stir in the sesame seeds and sesame oil.
  22. 22. Wash the sprouts.
  23. 23. Wash the coriander.
  24. 24. Shake the sprouts and coriander dry.
  25. 25. Pick the coriander leaves off the stems.
  26. 26. Toss the drained noodles with the carrots, snow peas, and pea shoots.
  27. 27. Fry the beef in a hot grill pan for 2 to 3 minutes on each side.
  28. 28. Remove the meat from the pan.
  29. 29. Let the meat rest briefly.
  30. 30. Slice the meat into strips.
  31. 31. Plate the noodle mixture.
  32. 32. Drizzle the noodles with the sesame dressing.
  33. 33. Arrange the beef strips on top of the noodles.
  34. 34. Garnish the dish with fresh coriander and black sesame seeds.
