🍰 Fresh Ginger Cucumber Ice

Ingredients
- 1 large cucumber
- 2 cm fresh ginger
- 0.25 bunch mint
- 400 ml sparkling wine
- 100 ml apple juice
- pepper (from the mill)
Instructions
- 1. Peel the cucumber.
- 2. Cut the cucumber in half lengthwise.
- 3. Remove the seeds from the cucumber halves.
- 4. Dice the cucumber flesh into small cubes.
- 5. Peel the ginger.
- 6. Finely chop the ginger.
- 7. Rinse the mint under cold water.
- 8. Shake the mint dry.
- 9. Pluck the mint leaves from the stems.
- 10. Finely chop the mint leaves.
- 11. Place the cucumber cubes, ginger, and mint into a blender.
- 12. Blend the ingredients into a smooth puree.
- 13. Pour the sparkling wine into the puree.
- 14. Pour the apple juice into the puree.
- 15. Mix everything well together.
- 16. Season the mixture with black pepper.
- 17. Pour the liquid into a shallow dish.
- 18. Place the dish in the freezer for about 4 hours.
- 19. Check the mixture regularly.
- 20. Once a first layer of ice has formed, stir it with a spoon.
- 21. Repeat the stirring several times during the freezing process.
- 22. Distribute the finished ice onto glasses.
- 23. Serve the ice immediately.
