🍽️ Indian Yogurt Dessert with Exotic Fruits (Shrikhand)

Ingredients
- 1 kg natural yogurt (3.5 % fat content)
- 125 g powdered sugar
- 1 pinch ground cardamom
- 1 small pinch ground saffron
- 75 g almond kernels
- 50 g pistachios
- 1 small mango
- saffron threads (for garnishing)
- 2 tbsp raisins
- 1 small pinch vanilla paste
Instructions
- 1. Line a fine mesh sieve with a clean cotton cloth.
- 2. Place the yogurt into the lined sieve.
- 3. Let the yogurt drain overnight.
- 4. Place the drained yogurt into a food processor.
- 5. Add the sugar, saffron, and cardamom.
- 6. Mix the mixture until creamy.
- 7. Cut the almonds into small matchsticks.
- 8. Peel the pistachios.
- 9. Roughly chop the pistachios.
- 10. Peel the mango.
- 11. Slice the flesh away from the pit.
- 12. Dice the mango flesh.
- 13. Distribute the mango cubes among four small bowls.
- 14. Mix the yogurt cream with half of the almonds and pistachios.
- 15. Pour the yogurt cream over the mango.
- 16. Sprinkle the remaining almonds and pistachios over the dessert.
- 17. Add the saffron threads.
- 18. Chop the raisins together with the vanilla seeds.
- 19. Spread the raisin mixture in the center of the dessert.
