🍽️ Aromatic Lentil Salad with Fresh Coriander

Ingredients
- 140 g brown lentils
- 1.5 tsp garam masala
- salt
- 1 tsp fresh chopped ginger
- 0.25 bunch coriander
- 0.5 untreated lemon (juice)
- 2 tbsp olive oil
Instructions
- 1. Place the lentils in a bowl and cover them with plenty of water.
- 2. Let the lentils soak in the water overnight.
- 3. Drain the soaking water the next day.
- 4. Cover the lentils with about 600 milliliters of fresh water.
- 5. Add the spices and ginger to the pot.
- 6. Bring the mixture to a boil.
- 7. Reduce the heat to a medium setting.
- 8. Let the lentils simmer gently for about 40 minutes.
- 9. If the water evaporates too quickly, add a little more as needed.
- 10. Rinse the coriander under running water.
- 11. Shake the coriander dry.
- 12. Set aside 4 stalks of coriander.
- 13. Finely chop the remaining coriander leaves.
- 14. Drain the cooked lentils.
- 15. Let the lentils cool down to lukewarm temperature.
- 16. Add the lemon juice and oil to the lentils.
- 17. Mix the lentils with the finely chopped coriander.
- 18. Season the salad with salt and pepper to taste.
- 19. Garnish the finished salad with the reserved coriander stalks.
- 20. Serve the salad.
