  1. 1. Place the lentils in a bowl and cover them with plenty of water.
  2. 2. Let the lentils soak in the water overnight.
  3. 3. Drain the soaking water the next day.
  4. 4. Cover the lentils with about 600 milliliters of fresh water.
  5. 5. Add the spices and ginger to the pot.
  6. 6. Bring the mixture to a boil.
  7. 7. Reduce the heat to a medium setting.
  8. 8. Let the lentils simmer gently for about 40 minutes.
  9. 9. If the water evaporates too quickly, add a little more as needed.
  10. 10. Rinse the coriander under running water.
  11. 11. Shake the coriander dry.
  12. 12. Set aside 4 stalks of coriander.
  13. 13. Finely chop the remaining coriander leaves.
  14. 14. Drain the cooked lentils.
  15. 15. Let the lentils cool down to lukewarm temperature.
  16. 16. Add the lemon juice and oil to the lentils.
  17. 17. Mix the lentils with the finely chopped coriander.
  18. 18. Season the salad with salt and pepper to taste.
  19. 19. Garnish the finished salad with the reserved coriander stalks.
  20. 20. Serve the salad.
