  2. 2. Boil the unpeeled potatoes in a pot of water until they are just tender.
  3. 3. Drain the cooking water and let the potatoes cool down briefly.
  4. 4. Peel the potatoes and cut them into thick wedges.
  5. 5. Place the potato wedges in a bowl.
  6. 6. Sprinkle the potatoes with curry powder, chili powder, turmeric, and salt.
  7. 7. Toss everything well so that the spices adhere evenly.
  8. 8. Wash the spring onions and remove the dry ends.
  9. 9. Cut the spring onions into pieces about 1 centimeter wide.
  10. 10. Heat oil in a large frying pan over high heat.
  11. 11. Fry the seasoned potatoes in the pan for 4 minutes.
  12. 12. Turn the potatoes frequently so they turn golden brown.
  13. 13. Reduce the heat to a medium level.
  14. 14. Add curry leaves, cinnamon, mustard seeds, and cumin to the potatoes.
  15. 15. Fry the spices along with the potatoes for 1 more minute.
  16. 16. Stir the chopped spring onions into the potatoes.
  17. 17. Continue frying the mixture for another 4 minutes.
  18. 18. Squeeze a lemon to obtain the juice.
  19. 19. Add 1 tablespoon of lemon juice to the finished potatoes.
  20. 20. Finally, season to taste with a little more salt and black pepper.
  21. 21. Serve the potatoes immediately while they are still hot.
