🍽️ Spicy Potato Sticks with a Lemon Twist

Ingredients
- 1 kg mostly waxy potatoes
- 2 tsp mild curry powder
- 1 tsp chili powder
- 1 tsp turmeric
- salt
- 3 bunches spring onions
- 3 tbsp oil
- 15 curry leaves
- 1 cinnamon stick
- 1 tsp brown mustard seeds
- 1 tsp cumin
- 0.5 lemon
- pepper
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Boil the unpeeled potatoes in a pot of water until they are just tender.
- 3. Drain the cooking water and let the potatoes cool down briefly.
- 4. Peel the potatoes and cut them into thick wedges.
- 5. Place the potato wedges in a bowl.
- 6. Sprinkle the potatoes with curry powder, chili powder, turmeric, and salt.
- 7. Toss everything well so that the spices adhere evenly.
- 8. Wash the spring onions and remove the dry ends.
- 9. Cut the spring onions into pieces about 1 centimeter wide.
- 10. Heat oil in a large frying pan over high heat.
- 11. Fry the seasoned potatoes in the pan for 4 minutes.
- 12. Turn the potatoes frequently so they turn golden brown.
- 13. Reduce the heat to a medium level.
- 14. Add curry leaves, cinnamon, mustard seeds, and cumin to the potatoes.
- 15. Fry the spices along with the potatoes for 1 more minute.
- 16. Stir the chopped spring onions into the potatoes.
- 17. Continue frying the mixture for another 4 minutes.
- 18. Squeeze a lemon to obtain the juice.
- 19. Add 1 tablespoon of lemon juice to the finished potatoes.
- 20. Finally, season to taste with a little more salt and black pepper.
- 21. Serve the potatoes immediately while they are still hot.
