  3. 3. Wash the tomatoes thoroughly and pat them dry with a kitchen towel.
  4. 4. Pierce the tomato skin in several places with a wooden skewer to prevent bursting during heating.
  5. 5. Place the tomatoes and basil sprigs alternately into the jars.
  6. 6. Add other herbs like bay leaves, rosemary, or thyme if desired.
  7. 7. Sprinkle the salt and peppercorns over the tomatoes.
  8. 8. Pour in the oil until the tomatoes are completely covered.
  9. 9. Seal the jars tightly.
  10. 10. Store the jars in a dark and cool place.
