Ingredients
- 1 handful basil
- 1 kg smaller, firm tomatoes
- 1 l olive oil
- 1 tsp salt
- 1 tbsp peppercorns
Instructions
- 1. Rinse the jars and lids with hot water to clean them.
- 2. Wash the basil under running water and shake it dry.
- 3. Wash the tomatoes thoroughly and pat them dry with a kitchen towel.
- 4. Pierce the tomato skin in several places with a wooden skewer to prevent bursting during heating.
- 5. Place the tomatoes and basil sprigs alternately into the jars.
- 6. Add other herbs like bay leaves, rosemary, or thyme if desired.
- 7. Sprinkle the salt and peppercorns over the tomatoes.
- 8. Pour in the oil until the tomatoes are completely covered.
- 9. Seal the jars tightly.
- 10. Store the jars in a dark and cool place.
