  1. 1. Carefully slit the fish along the belly, loosen the bones gently with your thumb, and remove the head.
  2. 2. Wash the sardines thoroughly, pat them dry, and place them in a baking dish.
  3. 3. Mix sherry vinegar with 250 milliliters of water, pour the mixture over the fish, and let it sit for about 1 hour.
  4. 4. Peel the garlic and chop it finely, roughly chop the parsley leaves.
  5. 5. Discard the marinade. Rinse the sardines under running water, pat them dry, return them to the dish, season with salt and pepper, sprinkle with garlic and parsley, pour the olive oil over them, and let them marinate for another hour.
