  1. 1. Mix flour, ground almonds, sugar, and the grated lemon zest in a large bowl.
  2. 2. Add the butter in small pieces and the egg yolk to the flour mixture.
  3. 3. Briefly mix the ingredients using the dough hooks of a hand mixer.
  4. 4. Then quickly knead the dough by hand into a smooth ball.
  5. 5. Wrap the dough tightly in cling film.
  6. 6. Store the dough in the refrigerator for one hour.
  7. 7. Preheat the oven to 180 degrees (160 degrees with fan or gas level 2 to 3).
  8. 8. Form small balls from the dough with a diameter of about 2 centimeters.
  9. 9. Roll the dough balls in the hazelnuts.
  10. 10. Press the nuts in slightly so they stick.
  11. 11. Place the balls on a baking sheet lined with baking paper.
  12. 12. Press a small indentation into the center of each ball using the handle of a ladle.
  13. 13. Fill half of the indentations with jam.
  14. 14. Fill the remaining indentations with fruit preserve.
  15. 15. Bake the pastries for about 20 minutes in the preheated oven.
  16. 16. Immediately after baking, fill the indentations of the warm pastries with the remaining jam.
  17. 17. Fill the remaining indentations with the remaining fruit preserve.
