🍽️ Crispy Hazelnut Pastries with Double Fruit Filling

Ingredients
- 140 g flour
- 70 g ground hazelnuts
- 70 g sugar
- lemon zest (from 1 lemon)
- 140 g soft butter
- 2 egg yolks
- 70 g chopped hazelnuts
- 3 tbsp ginger jam
- 3 tbsp rosehip jam
Instructions
- 1. Mix flour, ground almonds, sugar, and the grated lemon zest in a large bowl.
- 2. Add the butter in small pieces and the egg yolk to the flour mixture.
- 3. Briefly mix the ingredients using the dough hooks of a hand mixer.
- 4. Then quickly knead the dough by hand into a smooth ball.
- 5. Wrap the dough tightly in cling film.
- 6. Store the dough in the refrigerator for one hour.
- 7. Preheat the oven to 180 degrees (160 degrees with fan or gas level 2 to 3).
- 8. Form small balls from the dough with a diameter of about 2 centimeters.
- 9. Roll the dough balls in the hazelnuts.
- 10. Press the nuts in slightly so they stick.
- 11. Place the balls on a baking sheet lined with baking paper.
- 12. Press a small indentation into the center of each ball using the handle of a ladle.
- 13. Fill half of the indentations with jam.
- 14. Fill the remaining indentations with fruit preserve.
- 15. Bake the pastries for about 20 minutes in the preheated oven.
- 16. Immediately after baking, fill the indentations of the warm pastries with the remaining jam.
- 17. Fill the remaining indentations with the remaining fruit preserve.
