🍽️ Prepare aromatic lobster stock

Ingredients
- 3 lobster carcasses
- 1 onion
- 1 stalk leek
- 2 stalks celery
- 1 carrot
- 20 g butter
- 1 tbsp tomato paste
- 3 sprigs thyme
- 1 sprig parsley
- 40 ml cognac
- 150 ml dry white wine
- 2 fresh bay leaves
- 1 tsp peppercorns
- 1 tsp fennel seeds
Instructions
- 1. Crush the clean lobster shells by hand or with a rolling pin.
- 2. Thoroughly wash the onion, leek, celery, and carrots.
- 3. Peel the vegetables if necessary, and cut them into large chunks.
- 4. Heat the butter in a large pot.
- 5. Sauté the lobster shells while stirring until they turn slightly pink.
- 6. Add the chopped vegetables to the pot.
- 7. Sauté the vegetables briefly together with the shells.
- 8. Stir in the tomato paste, thyme, and parsley.
- 9. Deglaze the mixture with cognac.
- 10. Pour the white wine into the pot.
- 11. Add about 1 liter of water so that the shells are covered.
- 12. Add bay leaves, peppercorns, and fennel seeds.
- 13. Bring the liquid to a boil.
- 14. Skim off the rising foam with a spoon.
- 15. Let the stock simmer gently for about 30 minutes.
- 16. Line a sieve with a cloth.
- 17. Strain the stock through the sieve to remove solids and shells.
- 18. Use the finished stock as a base for soups and sauces.
