  2. 2. Thoroughly wash the onion, leek, celery, and carrots.
  3. 3. Peel the vegetables if necessary, and cut them into large chunks.
  4. 4. Heat the butter in a large pot.
  5. 5. Sauté the lobster shells while stirring until they turn slightly pink.
  6. 6. Add the chopped vegetables to the pot.
  7. 7. Sauté the vegetables briefly together with the shells.
  8. 8. Stir in the tomato paste, thyme, and parsley.
  9. 9. Deglaze the mixture with cognac.
  10. 10. Pour the white wine into the pot.
  11. 11. Add about 1 liter of water so that the shells are covered.
  12. 12. Add bay leaves, peppercorns, and fennel seeds.
  13. 13. Bring the liquid to a boil.
  14. 14. Skim off the rising foam with a spoon.
  15. 15. Let the stock simmer gently for about 30 minutes.

  17. 17. Strain the stock through the sieve to remove solids and shells.
