Ingredients

Instructions

  1. 1. Bring 10 liters of water to a boil in a large pot.
  2. 2. Add the lobsters one by one head-first into the boiling water so the temperature does not drop too much.
  3. 3. Cook the lobsters for about 2 to 3 minutes (this process is called parboiling).
  4. 4. Remove the lobsters from the pot and place them on a cutting board.
  5. 5. Pierce the top of the carapace (hard shell) with the tip of a knife.
  6. 6. Push the knife downwards to split the lobster in half lengthwise.
  7. 7. Do not cut all the way through the meat; keep the bottom connected.
  8. 8. Tap the claws gently with the back of the knife to help heat penetrate them.
  9. 9. Season the lobster halves with salt and pepper.
  10. 10. Brush the cut surfaces with oil.
  11. 11. Insert lemon slices into the cut lobster halves.
  12. 12. Preheat the grill and place the lobsters on it with the cut side facing down.
  13. 13. Roast the lobsters for about 3 minutes.
  14. 14. Turn the lobsters over so the meat side is facing up.
  15. 15. Grill the lobsters for another 4 to 5 minutes.
  16. 16. Serve the finished lobsters garnished with diced yellow bell peppers and tomatoes as desired.
