Ingredients
- 2 Lobster (each approx. 1 kg)
- Salt
- Pepper
- 3 tbsp Olive oil
Instructions
- 1. Bring 10 liters of water to a boil in a large pot.
- 2. Add the lobsters one by one head-first into the boiling water so the temperature does not drop too much.
- 3. Cook the lobsters for about 2 to 3 minutes (this process is called parboiling).
- 4. Remove the lobsters from the pot and place them on a cutting board.
- 5. Pierce the top of the carapace (hard shell) with the tip of a knife.
- 6. Push the knife downwards to split the lobster in half lengthwise.
- 7. Do not cut all the way through the meat; keep the bottom connected.
- 8. Tap the claws gently with the back of the knife to help heat penetrate them.
- 9. Season the lobster halves with salt and pepper.
- 10. Brush the cut surfaces with oil.
- 11. Insert lemon slices into the cut lobster halves.
- 12. Preheat the grill and place the lobsters on it with the cut side facing down.
- 13. Roast the lobsters for about 3 minutes.
- 14. Turn the lobsters over so the meat side is facing up.
- 15. Grill the lobsters for another 4 to 5 minutes.
- 16. Serve the finished lobsters garnished with diced yellow bell peppers and tomatoes as desired.
