🥗 Fresh Lobster and Papaya Salad with Lime Dressing

Ingredients
- 0.5 bunch cilantro
- 1 large lime
- 2 tbsp Thai fish sauce
- 2 tbsp soy sauce
- 2 tbsp rapeseed oil
- 1 tbsp sesame oil
- 1 small papaya
- 1 avocado
- 1 cooked lobster (approx. 600 g, cooked by the supplier and removed from the shell)
- 200 g mixed leaf salad
- 2 elongated shallots
- 100 g snow peas
- salt
Instructions
- 1. Wash the coriander leaves under running water.
- 2. Shake the leaves dry to remove excess water.
- 3. Carefully pick the leaves off the stems.
- 4. Roughly chop the coriander leaves with a knife.
- 5. Squeeze the lime to extract the juice.
- 6. Pour the lime juice into a small bowl.
- 7. Add the fish sauce to the bowl with the lime juice.
- 8. Add three tablespoons of lime juice to the mixture.
- 9. Add the soy sauce to the bowl.
- 10. Add rapeseed oil to the bowl.
- 11. Add sesame oil to the bowl.
- 12. Stir the sauce ingredients vigorously together.
- 13. Fold the chopped coriander leaves into the finished sauce.
- 14. Peel the papaya with a peeler.
- 15. Cut the peeled papaya in half.
- 16. Get a spoon ready.
- 17. Loosen the seeds from the papaya half with the spoon.
- 18. Remove the seeds completely from the papaya.
- 19. Cut the avocado in half.
- 20. Remove the pit from the avocado half.
- 21. Peel the skin off the avocado.
- 22. Slice the papaya into thin slices.
- 23. Slice the avocado into thin slices.
- 24. Place the papaya and avocado slices on a plate.
- 25. Pour some lime juice into a small dish.
- 26. Drizzle the fruit slices with the lime juice.
- 27. Cut the lobster into bite-sized pieces.
- 28. Place the lobster pieces in a small bowl.
- 29. Add some of the prepared sauce to the lobster pieces.
- 30. Mix the lobster pieces thoroughly with the sauce.
- 31. Remove the tough ends from the salad greens.
- 32. Wash the salad greens under running water.
- 33. Dry the salad greens in a salad spinner.
- 34. Cut the dried salad into bite-sized pieces.
- 35. Peel the shallots.
- 36. Cut the shallots into very fine strips.
- 37. Remove the ends from the snow peas.
- 38. Cut the snow peas into fine strips.
- 39. Bring water to a boil in a pot.
- 40. Add salt to the boiling water.
- 41. Put the snow peas into the boiling salted water for 30 seconds.
- 42. Remove the snow peas from the water immediately.
- 43. Hold the snow peas briefly under cold water (this is called blanching).
- 44. Let the snow peas drain well.
- 45. Place the prepared salad in a large bowl.
- 46. Add the sliced shallots to the bowl.
- 47. Add the drained snow peas to the bowl.
- 48. Take two-thirds of the remaining salad sauce.
- 49. Mix the salad, shallots, and snow peas with the sauce.
- 50. Place the mixed ingredients on a plate.
- 51. Distribute the marinated lobster pieces over the salad.
- 52. Distribute the papaya and avocado slices over the salad.
- 53. Drizzle the finished dish with the remaining sauce.
- 54. Garnish the salad with fresh coriander as desired.
