🍽️ Lobster in Lemon Butter Sauce with Tarragon

Ingredients
- 1 lobster (cooked, halved and kitchen-ready, cleaned with claws)
- 1 untreated lemon
- 20 ml sherry
- 2 tbsp tarragon (cut into thin strips)
- 4 tbsp butter
- salt
- pepper (from the mill)
Instructions
- 1. Squeeze the juice from half of the lemon.
- 2. Slice the other half of the lemon into thin rounds.
- 3. Season the lobster with salt and pepper.
- 4. Heat the butter in a pan together with the lemon slices.
- 5. Place the lobster with the meat side down into the hot butter.
- 6. Sauté the lobster over low heat for about 2 to 3 minutes.
- 7. Deglaze the dish with the lemon juice and the sherry.
- 8. Turn the lobster over so the shell is facing down.
- 9. Add the tarragon to the pan.
- 10. Pour hot butter over the meat repeatedly.
- 11. Add the prepared claw meat.
- 12. Heat the meat through in the butter for about 2 minutes.
- 13. Season the dish lightly with salt and pepper once more.
- 14. Serve the lobster immediately.
