  1. 1. Squeeze the juice from half of the lemon.
  2. 2. Slice the other half of the lemon into thin rounds.
  3. 3. Season the lobster with salt and pepper.
  4. 4. Heat the butter in a pan together with the lemon slices.
  5. 5. Place the lobster with the meat side down into the hot butter.
  6. 6. Sauté the lobster over low heat for about 2 to 3 minutes.
  7. 7. Deglaze the dish with the lemon juice and the sherry.
  8. 8. Turn the lobster over so the shell is facing down.
  9. 9. Add the tarragon to the pan.
  10. 10. Pour hot butter over the meat repeatedly.
  11. 11. Add the prepared claw meat.
  12. 12. Heat the meat through in the butter for about 2 minutes.
  13. 13. Season the dish lightly with salt and pepper once more.
  14. 14. Serve the lobster immediately.
