  1. 1. Rinse the chicken drumsticks under cold water and pat them dry with a kitchen towel.
  2. 2. Heat one tablespoon of oil in a frying pan.
  3. 3. Sear the chicken drumsticks over high heat for three to four minutes.
  4. 4. Remove the chicken drumsticks from the pan and let them drain on kitchen paper.
  5. 5. Peel the onion and the garlic clove and chop both finely.
  6. 6. Heat the remaining oil in the same pan.
  7. 7. Sauté the onions and garlic over medium heat for two to three minutes.
  8. 8. Add the tomatoes.
  9. 9. Let the sauce simmer covered over low heat for ten minutes.
  10. 10. Slice the mozzarella.
  11. 11. Wash the sage leaves and shake them dry.
  12. 12. Season the tomato sauce with salt, pepper, and freshly grated nutmeg.
  13. 13. Place the seasoned sauce into a baking dish.
  14. 14. Arrange the chicken drumsticks on top of the sauce.
  15. 15. Top each piece with one slice of ham.
  16. 16. Place two to three sage leaves on each piece.
  17. 17. Cover each piece with a slice of mozzarella.
  18. 18. Preheat the oven to 200 degrees Celsius (convection 180 degrees or gas mark 3).
  19. 19. Bake the gratin for about 40 minutes in the preheated oven.
