🍽️ Oven chicken stuffed with plums

Ingredients
- 600 g plums
- 200 g apricots
- 2 tbsp lemon juice
- pepper (from the mill)
- 1 pinch ground cloves
- 1 chicken (approx. 1.5 kg, ready for the kitchen)
- butter (for greasing)
- 2 garlic bulbs
- 250 ml chicken broth
- 200 ml red wine (or rosé)
- 1 vanilla pod
- 1 tbsp apple juice
- 2 tbsp apple jelly
- salt
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Thoroughly wash the plums and apricots.
- 3. Halve the fruits and remove the pits.
- 4. Roughly chop the fruit flesh.
- 5. Season the chopped fruits with lemon juice, pepper, and cloves.
- 6. Stuff the chicken with the fruit mixture.
- 7. Secure the chicken opening with wooden skewers.
- 8. Grease a roasting pan or baking sheet.
- 9. Place the chicken in the prepared pan.
- 10. Distribute the remaining fruits and halved garlic bulbs around the chicken.
- 11. Pour the broth and wine over the chicken.
- 12. Place the chicken in the preheated oven.
- 13. Roast the chicken for about 45 minutes.
- 14. Slice the vanilla pod lengthwise.
- 15. Scrape the seeds out of the vanilla pod.
- 16. Mix the vanilla seeds with apple juice and jelly.
- 17. Brush the mixture evenly over the chicken.
- 18. Salt and pepper the chicken to taste.
- 19. Place the empty vanilla pod into the roasting liquid.
- 20. Continue roasting the chicken for another 15 minutes until browned.
- 21. Remove the chicken from the oven.
- 22. Keep the chicken warm in the turned-off oven.
- 23. Strain the roasting liquid through a sieve.
- 24. Thicken the sauce to your liking, for example with cornstarch.
