🍳 Cottage Cheese with Walnut and Blackberry Compote

Ingredients
- 4 tbsp walnuts
- 1 sprig sage
- 2 tbsp honey (from the region)
- 125 g blackberries (from the region)
- 4 tbsp local apple juice
- 400 g cottage cheese (10% fat in dry matter)
Instructions
- 1. Roughly chop the walnuts.
- 2. Heat a pan over medium heat.
- 3. Roast the walnuts for 3 to 4 minutes without adding any fat.
- 4. Rinse the sage leaves under running water.
- 5. Shake the leaves dry.
- 6. Pluck the leaves off the stems.
- 7. Add the honey, 100 grams of blackberries, the apple juice, and the sage leaves to the pan.
- 8. Let the mixture simmer for 2 to 3 minutes.
- 9. Let the compote cool down briefly.
- 10. Divide the cottage cheese between two small bowls.
- 11. Spoon the walnut and blackberry compote over the cheese.
- 12. Garnish with the remaining fresh blackberries.
- 13. Serve the dish immediately.
