  2. 2. Heat a pan over medium heat.
  3. 3. Roast the walnuts for 3 to 4 minutes without adding any fat.
  4. 4. Rinse the sage leaves under running water.
  5. 5. Shake the leaves dry.
  6. 6. Pluck the leaves off the stems.
  7. 7. Add the honey, 100 grams of blackberries, the apple juice, and the sage leaves to the pan.
  8. 8. Let the mixture simmer for 2 to 3 minutes.
  9. 9. Let the compote cool down briefly.
  10. 10. Divide the cottage cheese between two small bowls.
  11. 11. Spoon the walnut and blackberry compote over the cheese.
  12. 12. Garnish with the remaining fresh blackberries.
  13. 13. Serve the dish immediately.
