Ingredients
- 1 carrot
- 2 spring onions
- 2 tbsp finely chopped parsley
- 1 tbsp olive oil
- salt
- pepper (from the mill)
- 0.5 tsp curry powder
- 8 slices whole wheat toast
- 8 tbsp cottage cheese
- 4 leaves iceberg lettuce
- 4 tbsp yogurt
- 2 tbsp grated Gouda
Instructions
- 1. Peel the carrots.
- 2. Grate the carrots finely.
- 3. Trim the ends of the spring onions.
- 4. Wash the spring onions thoroughly.
- 5. Slice the spring onions into thin strips.
- 6. Heat the olive oil in a pan.
- 7. Add the grated carrots and spring onions to the hot pan.
- 8. Sauté the vegetables over medium heat.
- 9. Season the vegetables with salt.
- 10. Season the vegetables with pepper.
- 11. Season the vegetables with curry powder.
- 12. Reduce the heat to low.
- 13. Cook the vegetables, stirring frequently, for 1 minute.
- 14. Stir the parsley into the vegetables.
- 15. Let the vegetable mixture cool down.
- 16. Toast the bread slices.
- 17. Spread the cottage cheese on the toast bread slices.
- 18. Place the lettuce leaves on the cottage cheese.
- 19. Mix the cooled vegetable mixture with the yogurt.
- 20. Mix the vegetable-yogurt mixture with the Gouda cheese.
- 21. Distribute the vegetable salad onto 4 bread slices.
- 22. Cover the topped bread slices with the remaining bread slices.
- 23. Make sure the lettuce leaves are facing down.
- 24. Press the sandwiches together gently.
- 25. Cut the sandwiches diagonally in half.
