🍽️ Beans and Zucchini with Nuts

Ingredients
- 250 g green beans
- 500 g zucchini
- 300 g broad beans
- 200 g frozen peas
- 2 tbsp lemon juice
- 50 ml olive oil
- salt
- pepper (from the mill)
- 2 tsp rosemary needles
- 3 tbsp tomato paste
- 3 tbsp walnuts
Instructions
- 1. Wash the green beans and trim the ends. Wash the zucchini, cut it in half lengthwise, scoop out the seeds with a small spoon, and cut the vegetable into long sticks.
- 2. Let the peas thaw.
- 3. Cook the green beans in well-salted boiling water for 5 minutes. Then add the broad beans, the zucchini, and the peas, and cook everything for another 5 minutes.
- 4. Drain the vegetables and let them drip dry.
- 5. Heat the olive oil in a large pot. Stir in the tomato paste and the walnuts, add the vegetables, mix everything gently, and season with
- 6. lemon juice, salt, pepper, and rosemary. Bring the mixture to a brief boil and then let it simmer for a moment.
