🍽️ Chicken Soup with Glass Noodles

Ingredients
- 4 Shiitake mushrooms (dried)
- 20 g glass noodles
- 1 chicken breast fillet
- 3 tbsp light soy sauce
- salt
- pepper (from the mill)
- 1 small carrot (cut into sticks)
- 400 ml chicken broth
- 50 g peas (frozen)
Instructions
- 1. Soak the mushrooms in lukewarm water.
- 2. Soak the glass noodles in lukewarm water as well.
- 3. Cut the chicken breast fillet crosswise into thin strips and marinate them in the soy sauce with a little salt and pepper for about 20 minutes.
- 4. Bring the broth to a boil in a pot, add the carrots and peas, and let them simmer for about 5 minutes.
- 5. Cut the mushrooms into strips and remove the stems.
- 6. Drain the glass noodles and cut them into short pieces if necessary.
- 7. Add the mushrooms, glass noodles, and chicken to the broth.
- 8. Let everything simmer for about 2 minutes, season the soup to taste, and serve.
