🍽️ Mediterran Chicken Thighs with Tomato and Olive Sauce

Ingredients
- 12 small chicken drumsticks
- 1 onion
- 1 garlic clove
- 60 g green, stuffed olives (with pepper)
- olive oil
- salt
- pepper (from the mill)
- 50 g black, pitted olives
- 400 g chopped tomatoes (can)
- 2 tbsp thyme
- 150 ml dry white wine
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Wash the chicken thighs thoroughly and pat them dry with a kitchen towel.
- 3. Peel the onion and the garlic.
- 4. Cut the onion into thin strips.
- 5. Finely chop the garlic.
- 6. Slice the green olives.
- 7. Season the meat with salt and pepper.
- 8. Heat oil in a pan and fry the chicken thighs until golden brown on all sides.
- 9. Place the fried chicken thighs into a heatproof baking dish.
- 10. Sauté the onion strips and chopped garlic in the remaining frying fat.
- 11. Mix the vegetables with the olive slices, tomatoes, and thyme.
- 12. Deglaze the mixture with wine.
- 13. Season the sauce again with salt and pepper.
- 14. Pour the sauce over the chicken thighs in the dish.
- 15. Braise the chicken thighs in the preheated oven for 25 to 30 minutes.
- 16. Stir the sauce occasionally during the cooking time.
- 17. Take the dish out of the oven.
- 18. Serve the dish immediately.
