  2. 2. Wash the chicken thighs thoroughly and pat them dry with a kitchen towel.
  3. 3. Peel the onion and the garlic.
  4. 4. Cut the onion into thin strips.
  5. 5. Finely chop the garlic.
  6. 6. Slice the green olives.
  7. 7. Season the meat with salt and pepper.
  8. 8. Heat oil in a pan and fry the chicken thighs until golden brown on all sides.
  9. 9. Place the fried chicken thighs into a heatproof baking dish.
  10. 10. Sauté the onion strips and chopped garlic in the remaining frying fat.
  11. 11. Mix the vegetables with the olive slices, tomatoes, and thyme.
  12. 12. Deglaze the mixture with wine.
  13. 13. Season the sauce again with salt and pepper.
  14. 14. Pour the sauce over the chicken thighs in the dish.
  15. 15. Braise the chicken thighs in the preheated oven for 25 to 30 minutes.
