🍽️ Moroccan-style Chicken with Olives and Lemon

Ingredients
- 800 g chicken breast fillet
- 4 tomatoes
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tsp freshly grated ginger
- 1 tsp ground cumin
- 1 tsp turmeric powder
- 200 ml chicken broth
- 100 g preserved lemons (specialty store, jar or can)
- 100 g black olives (pitted)
- 2 tbsp freshly chopped cilantro
- 2 tbsp freshly chopped parsley
- 1 tbsp chives
Instructions
- 1. Rinse the chicken under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into small cubes.
- 3. Wash the tomatoes and cut them into quarters.
- 4. Remove the seeds from the tomatoes and finely chop the flesh.
- 5. Peel the onion and the garlic.
- 6. Dice the onion and garlic very finely.
- 7. Heat oil in a pan.
- 8. Add the onions and garlic to the hot oil and sauté until translucent.
- 9. Add the chicken cubes.
- 10. Sear the meat for 3 to 4 minutes until it takes on a slight color.
- 11. Add the ginger, cumin, and turmeric to the pan.
- 12. Sauté the spices briefly.
- 13. Deglaze the mixture with the broth.
- 14. Halve the lemon.
- 15. Scrape out the lemon flesh with a spoon.
- 16. Dice the scraped lemon flesh.
- 17. Cut the lemon peel into thin strips.
- 18. Add the diced lemon and lemon strips to the pan.
- 19. Add the olives.
- 20. Let the dish simmer gently over low heat for 4 to 5 minutes.
- 21. Add the fresh herbs to the chicken.
- 22. Season the dish finally with salt and pepper.
- 23. Serve the chicken warm.
