  1. 1. Rinse the chicken fillets under running water and pat them dry with a kitchen towel.
  2. 2. Cut the chicken meat into small strips.
  3. 3. Peel the galangal root and the garlic clove.
  4. 4. Finely chop the galangal root and the garlic.
  5. 5. Mix the chopped galangal and garlic in a bowl with oil, sambal oelek, soy sauce, and pepper.
  6. 6. Toss the chicken strips in the marinade until they are completely coated.
  7. 7. Cover the bowl and place it in the refrigerator for approx. 2 hours.
  8. 8. Bring 500 ml of water to a boil and add some salt.
  9. 9. Cook the rice in the boiling salted water for approx. 20 minutes.
  10. 10. Rinse the snow peas under running water.
  11. 11. Remove the tough stems and strings from the snow peas.
  12. 12. Cut the snow peas in half crosswise.
  13. 13. Stir the cornstarch into the broth until smooth and no lumps remain.
  14. 14. Heat a wok or a deep frying pan on the stove.
  15. 15. Take the marinated chicken strips out of the marinade.
  16. 16. Let the excess marinade drain off the meat.
  17. 17. Sear the chicken meat in the hot wok or pan.
  18. 18. Add the halved snow peas to the meat.
  19. 19. Sauté the snow peas briefly with the meat.
  20. 20. Pour the mixed broth over the meat and snow peas.
  21. 21. Pour the remaining marinade from the bowl into the pan.
  22. 22. Let everything simmer on medium heat for approx. 5 minutes.
  23. 23. Mix the cornstarch smoothly with a little cold water.
  24. 24. Pour the cold starch-water mixture into the pan to thicken the sauce.
  25. 25. Season the dish with salt and pepper to taste.
  26. 26. Warm the serving plates.
  27. 27. Plate the chicken with the snow peas on the warmed plates.
  28. 28. Serve the dish together with the cooked rice.
