🍽️ Chicken Strips with Snow Peas

Ingredients
- 500 g chicken breast fillet
- 60 g galangal fresh (or ginger)
- 2 garlic cloves
- 4 tbsp oil
- 0.25 tsp sambal oelek
- 5 tbsp light soy sauce
- pepper (from the mill)
- 250 g long grain rice
- 300 g snow peas
- 150 ml chicken broth
- 0.5 tsp cornstarch
Instructions
- 1. Rinse the chicken fillets under running water and pat them dry with a kitchen towel.
- 2. Cut the chicken meat into small strips.
- 3. Peel the galangal root and the garlic clove.
- 4. Finely chop the galangal root and the garlic.
- 5. Mix the chopped galangal and garlic in a bowl with oil, sambal oelek, soy sauce, and pepper.
- 6. Toss the chicken strips in the marinade until they are completely coated.
- 7. Cover the bowl and place it in the refrigerator for approx. 2 hours.
- 8. Bring 500 ml of water to a boil and add some salt.
- 9. Cook the rice in the boiling salted water for approx. 20 minutes.
- 10. Rinse the snow peas under running water.
- 11. Remove the tough stems and strings from the snow peas.
- 12. Cut the snow peas in half crosswise.
- 13. Stir the cornstarch into the broth until smooth and no lumps remain.
- 14. Heat a wok or a deep frying pan on the stove.
- 15. Take the marinated chicken strips out of the marinade.
- 16. Let the excess marinade drain off the meat.
- 17. Sear the chicken meat in the hot wok or pan.
- 18. Add the halved snow peas to the meat.
- 19. Sauté the snow peas briefly with the meat.
- 20. Pour the mixed broth over the meat and snow peas.
- 21. Pour the remaining marinade from the bowl into the pan.
- 22. Let everything simmer on medium heat for approx. 5 minutes.
- 23. Mix the cornstarch smoothly with a little cold water.
- 24. Pour the cold starch-water mixture into the pan to thicken the sauce.
- 25. Season the dish with salt and pepper to taste.
- 26. Warm the serving plates.
- 27. Plate the chicken with the snow peas on the warmed plates.
- 28. Serve the dish together with the cooked rice.
