🍽️ Crispy Chicken Fajitas

Ingredients
- 2 chicken breast fillets
- 1 chili pepper
- 1 garlic clove
- 1 yellow bell pepper
- 1 green bell pepper
- 1 red onion
- 2 tbsp oil
- 100 ml poultry broth
- 100 g corn kernels
- salt
- cayenne pepper
- 2 tbsp chopped parsley
- 4 tortillas
Instructions
- 1. Rinse the chicken breast fillets thoroughly.
- 2. Cut the meat into small, bite-sized cubes.
- 3. Rinse the chili pepper.
- 4. Finely chop the chili.
- 5. Peel the garlic cloves.
- 6. Press the garlic directly onto the chopped chili.
- 7. Wash the bell peppers thoroughly.
- 8. Remove the stem and seeds from the bell peppers.
- 9. Slice the bell peppers into thin strips.
- 10. Peel the onion.
- 11. Cut the onion in half.
- 12. Slice the onion halves into thin strips as well.
- 13. Heat some oil in a large pan.
- 14. Sear the chicken cubes in the hot oil for a short time.
- 15. Add the pepper strips to the pan.
- 16. Add the onion strips to the pan.
- 17. Deglaze the mixture with some broth.
- 18. Add the corn kernels to the pan.
- 19. Add the chili-garlic mixture to the pan.
- 20. Let everything simmer on low heat for 5 to 7 minutes.
- 21. Season the filling with salt.
- 22. Season the filling with cayenne pepper.
- 23. Set aside 1 tablespoon of parsley.
- 24. Stir the remaining parsley into the filling.
- 25. Distribute the filling onto the tortillas.
- 26. Roll the tortillas tightly.
- 27. Sprinkle the fajitas with the reserved parsley.
- 28. Serve the fajitas immediately.
