Ingredients
- 200 g sweet potatoes
- 1 tbsp olive oil
- 0.5 tsp paprika powder
- 0.5 tsp ground cumin
- 0.5 tsp turmeric powder
- salt
- 50 g quinoa
- 1 handful baby spinach
- 0.3 yellow bell pepper
- 0.5 avocado
- 2 tbsp pumpkin seeds
- 2 tbsp fresh lemon juice
Instructions
- 1. Peel the sweet potato completely.
- 2. Cut the vegetable into small cubes.
- 3. Place the sweet potato pieces in a bowl.
- 4. Toss the pieces with olive oil, paprika powder, cumin, turmeric, and a pinch of salt.
- 5. Place the seasoned sweet potato cubes on a baking sheet lined with baking paper.
- 6. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-assisted).
- 7. Bake the sweet potatoes for 25 to 30 minutes until golden brown.
- 8. Rinse the quinoa under cold running water in a fine mesh sieve.
- 9. Cook the grain according to the package instructions.
- 10. Wash the baby spinach thoroughly.
- 11. Shake the spinach dry.
- 12. Fold the spinach into the quinoa during the last 3 minutes of cooking time.
- 13. Remove the stem and seeds from the bell pepper.
- 14. Wash the bell pepper.
- 15. Cut the bell pepper into small cubes.
- 16. Remove the pit from the avocado.
- 17. Peel the avocado.
- 18. Slice the flesh of the avocado into thin strips.
- 19. Arrange all prepared ingredients nicely on a plate.
- 20. Sprinkle pumpkin seeds over the dish.
- 21. Drizzle everything with fresh lemon juice.
- 22. Serve your balanced power bowl immediately.
