🍽️ Crunchy Honey and Spice Cookies

Ingredients
- 35 ml whipping cream
- 80 g butter
- 100 g honey
- 50 g sugar
- 0.5 tsp cinnamon powder
- 1 pinch cardamom
- 0.5 untreated orange (zest)
- 0.5 tsp saltpeter
- 225 g flour
- 50 g ground hazelnuts
- 225 g liquid honey
- 4 tbsp butter
- 2 tbsp chopped almond kernels
- 50 g puffed rice
Instructions
- 1. Heat cream, butter, and syrup in a pot until the butter has melted.
- 2. Stir in sugar, spices, orange peel, saltpeter (a leavening agent), flour, and nuts into the warm mixture.
- 3. Knead everything into a smooth dough.
- 4. Divide the dough into two equal parts.
- 5. Shape each part into a roll with a diameter of 3 cm.
- 6. Cover the rolls and place them in the refrigerator for 1 hour.
- 7. Preheat the oven to 180°C using top and bottom heat.
- 8. Slice the cold rolls into 1 cm thick rounds.
- 9. Shape the rounds into small balls and press them down slightly.
- 10. Place the cookies on a baking sheet lined with baking paper.
- 11. Bake the cookies in the preheated oven for approx. 15 minutes.
- 12. Lightly caramelize honey and butter in a pot.
- 13. Remove the pot from the heat and let the mixture cool down briefly.
- 14. Thoroughly mix puffed rice and nuts with the honey-butter mixture.
- 15. Form small balls from the mixture using two teaspoons.
- 16. Place the balls on baking paper and let them dry.
