🍽️ Crunchy Spiced Honey Cookies

Ingredients
- 150 g honey
- 150 g beet syrup
- 200 g butter
- 500 g rye flour (Type 1050)
- 1 untreated orange (zested peel)
- 4 tsp ground cloves
- 10 g potash (almost 1 tsp)
- 3 tsp water
- powdered sugar (for dusting)
Instructions
- 1. Warm honey, syrup, and butter in a pot over low heat until the butter is completely melted.
- 2. Let the honey-butter mixture cool down until it reaches room temperature.
- 3. Mix flour, orange zest, and ground cloves in a large bowl.
- 4. Stir the cooled honey-butter mixture into the flour mixture.
- 5. Dissolve saleratus (a leavening agent) in a little water and knead this solution into the dough.
- 6. Cover the dough and let it rest at room temperature for 24 hours.
- 7. Preheat the oven to 180 degrees.
- 8. Grease a baking sheet with a little butter.
- 9. Dust a work surface with flour and roll out the dough to about half a centimeter thick.
- 10. Cut out stars and hearts from the dough using cookie cutters.
- 11. Place the heart shapes on the prepared baking sheet.
- 12. Bake the cookies on the middle rack for about 12 minutes until golden yellow.
- 13. Let the cookies cool on a wire rack.
- 14. Dust the cooled cookies with powdered sugar and serve.
