🍰 Moist Honey Cakes with Marzipan

Ingredients
- 130 g Honey
- 120 g Sugar
- 130 g Butter
- 1 Egg Yolk
- 300 g Flour
- 10 g Gingerbread Spice
- 2 tsp Baking Powder
- 50 g Ground Almond Kernels
- 100 g Candied Cherries
- Almond Sticks
- 250 g Powdered Sugar
- 60 Baking Wafers
- 50 g Candied Pineapple
- 150 g Marzipan Base
Instructions
- 1. Preheat the oven to 175 degrees Celsius.
- 2. Warm the honey together with the sugar and butter in a pot over low heat.
- 3. Stir until the sugar and butter have completely dissolved.
- 4. Remove the mixture from the heat and let it cool down.
- 5. Stir the egg yolks into the cooled honey-sugar mixture.
- 6. Add the flour, spices, baking powder, and almonds.
- 7. Knead everything into a smooth dough.
- 8. Dice the marzipan paste and the pineapple very finely.
- 9. Knead the fine cubes into the dough.
- 10. Roll out the dough on a floured surface to a thickness of about 5 millimeters.
- 11. Cut out circles with a diameter of 5 centimeters using a round cutter.
- 12. Place the dough circles on wafer cookies (thin, crispy wafers).
- 13. Bake the cakes in the preheated oven for about 12 to 13 minutes.
- 14. Remove the cakes from the oven and let them cool completely.
- 15. Mix powdered sugar with a little water until a liquid icing forms.
- 16. Brush the cooled honey cakes with the sugar icing.
- 17. Decorate the cakes with candied cherries and almond slivers.
