🍰 Moist Honey Cake with Nuts and Fruits

Ingredients
- 500 g Honey
- 125 ml Oil
- 250 g Sugar
- 700 g Flour
- 1 packet Baking Powder
- 250 g Almond Kernels (ground)
- 2 tsp Cinnamon
- 0.25 tsp Clove Powder
- 0.25 tsp Allspice
- 1 pinch Salt
- 3 Eggs
- 100 g Citron (finely chopped)
- 100 g Orange Peel (finely chopped)
- 3 tbsp Whipping Cream
- 100 g Almond Kernels
- 100 g Citron
- 20 Maraschino Cherries (halved)
Instructions
- 1. Heat the oil, honey, and sugar in a pot. Stir until the mixture comes to a boil. Remove the pot from the heat and let the mixture cool down completely.
- 2. Mix the flour, baking powder, ground almonds, spices, eggs, candied lemon peel, and candied orange peel in a large bowl.
- 3. Add the cooled honey-oil mixture to the flour mixture. Stir everything well. If the dough seems too runny, add a little more flour until the consistency is correct.
- 4. Cover the bowl and let the dough rest in the refrigerator for about 1 hour.
- 5. Preheat the oven to 200 degrees Celsius with fan (convection).
- 6. Grease a baking sheet with some fat. Spread the dough onto it and smooth the surface.
- 7. Spread a layer of cream evenly over the dough.
- 8. Cut a grid into the dough to create squares with a side length of 6 centimeters.
- 9. Decorate each individual square with almond slivers, glazed cherries, and small pieces of candied lemon peel.
- 10. Place the tray on the middle rack in the preheated oven. Bake the cake for about 40 minutes until it is light brown.
- 11. Remove the cake from the oven and let it cool down for a short while.
- 12. Carefully release the cake from the baking sheet. Cut it along the previously made lines into the individual squares.
