Ingredients
- 1 tsp liquid honey
- 2 tsp hot mustard
- salt
- pepper (from the mill)
- 5 tbsp olive oil
- 2.5 tbsp dark balsamic vinegar
- 1 untreated lemon
Instructions
- 1. Do not preheat the oven, as this recipe requires no heat.
- 2. Take a small bowl and add the honey.
- 3. Add the mustard to the bowl.
- 4. Season the mixture with a pinch of salt.
- 5. Add freshly ground pepper.
- 6. Stir the honey, mustard, salt, and pepper well in the bowl.
- 7. Take the oil and pour it in a thin, steady stream into the mixture.
- 8. Whisk the entire mixture vigorously with a fork.
- 9. Add the vinegar to the emulsified mixture.
- 10. Stir the vinegar in well until it is fully incorporated.
- 11. Wash the lemon under hot water.
- 12. Pat the lemon dry with a cloth.
- 13. Grate some lemon zest (peel) directly into the dressing.
- 14. Finally, adjust the seasoning of the dressing with salt and pepper.
- 15. Serve the finished dressing with fresh leaf salads.
