🍰 Honey Gingerbread

Ingredients
- 300 g wheat flour
- 1 tsp baking powder
- 100 g ground hazelnuts
- 125 g ready-to-eat dried plums
- 150 g liquid honey
- 1 egg
- 1 egg yolk
- 3 tsp gingerbread spice
- 1 egg (for brushing)
- almond kernels (whole, peeled)
- 250 g powdered sugar
- food coloring
Instructions
- 1. Mix the flour with the baking powder.
- 2. Stir in the hazelnuts.
- 3. Remove the pits from the dried plums.
- 4. Puree the plums finely.
- 5. Add the plum puree, honey, egg, egg yolk, and gingerbread spice to the flour mixture.
- 6. Knead everything into a firm dough using the beaters of a hand mixer.
- 7. Cover the dough.
- 8. Let the dough rest overnight at room temperature.
- 9. The next day, roll the dough out to about 1 centimeter thick.
- 10. Cut out shapes like moons or stars using cookie cutters.
- 11. Place them on a baking sheet lined with parchment paper.
- 12. Whisk one egg with 2 tablespoons of water.
- 13. Brush the gingerbread with this mixture.
- 14. Top with almonds if desired.
- 15. Preheat the oven.
- 16. Bake the gingerbread at 180 degrees Celsius conventional heat or 160 degrees Celsius fan-forced for about 20 minutes.
- 17. Remove them.
- 18. Let them cool down completely.
- 19. Mix powdered sugar with 3 to 4 tablespoons of water until smooth.
- 20. Divide the icing as desired.
- 21. Stir in some food coloring to each portion.
- 22. Stir until the color is even.
- 23. Fill the icing into small piping bags.
- 24. Snip off the tips slightly.
- 25. Decorate or write on the cooled gingerbread.
- 26. Let the decoration dry.
