  1. 1. Mix the flour with the baking powder.
  2. 2. Stir in the hazelnuts.
  3. 3. Remove the pits from the dried plums.
  4. 4. Puree the plums finely.
  5. 5. Add the plum puree, honey, egg, egg yolk, and gingerbread spice to the flour mixture.
  6. 6. Knead everything into a firm dough using the beaters of a hand mixer.
  7. 7. Cover the dough.
  8. 8. Let the dough rest overnight at room temperature.
  9. 9. The next day, roll the dough out to about 1 centimeter thick.
  10. 10. Cut out shapes like moons or stars using cookie cutters.
  11. 11. Place them on a baking sheet lined with parchment paper.
  12. 12. Whisk one egg with 2 tablespoons of water.
  13. 13. Brush the gingerbread with this mixture.
  14. 14. Top with almonds if desired.
  15. 15. Preheat the oven.
  16. 16. Bake the gingerbread at 180 degrees Celsius conventional heat or 160 degrees Celsius fan-forced for about 20 minutes.
  17. 17. Remove them.
  18. 18. Let them cool down completely.
  19. 19. Mix powdered sugar with 3 to 4 tablespoons of water until smooth.
  20. 20. Divide the icing as desired.
  21. 21. Stir in some food coloring to each portion.
  22. 22. Stir until the color is even.
  23. 23. Fill the icing into small piping bags.
  24. 24. Snip off the tips slightly.
  25. 25. Decorate or write on the cooled gingerbread.
  26. 26. Let the decoration dry.
