🍽️ Honey chicken drumsticks with pumpkin and pepper

Ingredients
- 800 g Hokkaido pumpkin
- 1 garlic bulb
- 2 red bell peppers
- 2 tbsp olive oil
- salt
- pepper
- 4 chicken drumsticks (150 g each)
- 3 sprigs rosemary
- 2 stalks oregano
- 40 g butter
- 4 tbsp honey
- 2 tbsp lemon juice
Instructions
- 1. Wash the pumpkin thoroughly.
- 2. Cut the pumpkin into quarters and remove the seeds.
- 3. Cut the pumpkin flesh into small cubes.
- 4. Peel the garlic.
- 5. Cut the garlic cloves in half.
- 6. Remove the seeds and white pith from the pepper.
- 7. Cut the pepper into small pieces.
- 8. Place the pumpkin, garlic, and pepper in a baking dish.
- 9. Drizzle one tablespoon of oil over the vegetables.
- 10. Season the vegetables with salt and pepper.
- 11. Rinse the chicken drumsticks under cold water.
- 12. Pat the chicken drumsticks dry with a kitchen towel.
- 13. Season the chicken drumsticks with salt.
- 14. Heat the remaining oil in a large pan.
- 15. Place the chicken drumsticks skin-side down in the hot pan.
- 16. Fry the chicken drumsticks for about five minutes over medium heat.
- 17. Turn the chicken drumsticks.
- 18. Fry the other side for another five minutes as well.
- 19. Wash the fresh herbs under running water.
- 20. Shake the herbs dry.
- 21. Roughly chop the herbs by hand.
- 22. Finely chop half of the rosemary.
- 23. Place the finely chopped half of the rosemary into a small pot.
- 24. Add butter, honey, lemon juice, salt, and pepper to the pot.
- 25. Warm the mixture over medium heat.
- 26. Stir the mixture constantly.
- 27. Let the mixture simmer for two to three minutes.
- 28. Place the pre-fried chicken drumsticks on the vegetables in the baking dish.
- 29. Brush the chicken drumsticks with the honey mixture.
- 30. Preheat the oven to 200 degrees Celsius (convection 180 degrees Celsius, gas mark 3).
- 31. Place the baking dish in the preheated oven.
- 32. Bake the chicken drumsticks for 25 to 30 minutes.
- 33. Turn the chicken drumsticks occasionally during the baking time.
- 34. Brush the chicken drumsticks again with the honey mixture each time you turn them.
- 35. Add a little water to the dish if it becomes too dry.
- 36. Remove the baking dish from the oven when the chicken drumsticks are golden brown.
- 37. Garnish the dish with the remaining fresh herbs.
- 38. Serve the dish hot.
