🍽️ Elderberry Sauce for Game

Ingredients
- 2 shallots
- 400 ml game stock
- 2 tbsp raspberry vinegar (alternatively red wine vinegar)
- 1 tbsp elderflower syrup (health food store)
- 125 ml elderberry juice
- 125 ml red wine
- 10 peppercorns
- 1 tsp cornstarch
- salt
- pepper
Instructions
- 1. Peel the shallots.
- 2. Cut the shallots into quarters.
- 3. Place the shallots in a large pot.
- 4. Pour the game stock into the pot.
- 5. Add the raspberry vinegar.
- 6. Add the elderflower syrup.
- 7. Add the elderberry juice.
- 8. Add the red wine.
- 9. Add the peppercorns.
- 10. Simmer the mixture over low heat.
- 11. Reduce the liquid until it is about one third less.
- 12. Strain the sauce through a fine mesh sieve.
- 13. Take 2 teaspoons of cold water.
- 14. Mix the cornstarch with the cold water until smooth.
- 15. Stir the starch mixture into the sauce.
- 16. Thicken the sauce.
- 17. Season the sauce with salt.
- 18. Season the sauce with pepper.
- 19. Quickly pan-fry the loin fillet of venison.
- 20. Quickly pan-fry the venison or deer medallions.
- 21. Serve the elderberry sauce with the meat.
