🍽️ Elderberry Jam

Ingredients
- 1 kg elderberries
- 500 g very ripe pears
- 50 g coconut blossom sugar
- 1 small organic lemon
- 10 g pectin
Instructions
- 1. Place the jam jars with their lids in a large pot.
- 2. Fill the pot with hot water.
- 3. Let the jars sterilize in the hot water for 10 minutes.
- 4. Then remove them from the water.
- 5. Place them upside down on clean kitchen towels.
- 6. Let them cool down.
- 7. Wash the pear.
- 8. Remove the core of the pear.
- 9. Cut the flesh of the pear into small cubes.
- 10. Rinse the elderberries.
- 11. Let the berries drain well.
- 12. Pick off the stems from the berries.
- 13. Put the pear pieces into a pot.
- 14. Add the berries to the pot.
- 15. Add 30 grams of coconut blossom sugar to the pot.
- 16. Pour 125 milliliters of water into the pot.
- 17. Bring the mixture to a boil.
- 18. Let the mixture simmer over medium heat.
- 19. Place a lid on the pot.
- 20. Simmer for about 15 minutes.
- 21. Stir the mixture occasionally.
- 22. Rinse the lemon under hot water.
- 23. Pat the lemon dry.
- 24. Finely grate some of the lemon zest.
- 25. Cut the lemon in half.
- 26. Squeeze the juice from the lemon.
- 27. Add the lemon zest to the pear and berry mixture.
- 28. Add the lemon juice to the pear and berry mixture.
- 29. Puree the mixture finely using a hand blender.
- 30. Mix the pectin with the remaining coconut blossom sugar.
- 31. Stir the pectin-sugar mixture slowly into the pear and berry mixture.
- 32. Let everything boil for another 1 minute.
- 33. Fill the jam into the clean jars to the brim.
- 34. Seal the jars immediately.
