  1. 1. Place the jam jars with their lids in a large pot.
  2. 2. Fill the pot with hot water.
  3. 3. Let the jars sterilize in the hot water for 10 minutes.
  4. 4. Then remove them from the water.
  5. 5. Place them upside down on clean kitchen towels.
  6. 6. Let them cool down.
  7. 7. Wash the pear.
  8. 8. Remove the core of the pear.
  9. 9. Cut the flesh of the pear into small cubes.
  10. 10. Rinse the elderberries.
  11. 11. Let the berries drain well.
  12. 12. Pick off the stems from the berries.
  13. 13. Put the pear pieces into a pot.
  14. 14. Add the berries to the pot.
  15. 15. Add 30 grams of coconut blossom sugar to the pot.
  16. 16. Pour 125 milliliters of water into the pot.
  17. 17. Bring the mixture to a boil.
  18. 18. Let the mixture simmer over medium heat.
  19. 19. Place a lid on the pot.
  20. 20. Simmer for about 15 minutes.
  21. 21. Stir the mixture occasionally.
  22. 22. Rinse the lemon under hot water.
  23. 23. Pat the lemon dry.
  24. 24. Finely grate some of the lemon zest.
  25. 25. Cut the lemon in half.
  26. 26. Squeeze the juice from the lemon.
  27. 27. Add the lemon zest to the pear and berry mixture.
  28. 28. Add the lemon juice to the pear and berry mixture.
  29. 29. Puree the mixture finely using a hand blender.
  30. 30. Mix the pectin with the remaining coconut blossom sugar.
  31. 31. Stir the pectin-sugar mixture slowly into the pear and berry mixture.
  32. 32. Let everything boil for another 1 minute.
  33. 33. Fill the jam into the clean jars to the brim.
  34. 34. Seal the jars immediately.
