🍽️ Fresh Elderflower Syrup

Ingredients
- 12 elderflower umbels
- 4 Packung citric acid
- 2 lemons
- 1 l water
- 1 kg sugar
Instructions
- 1. Shake the elderflower umbels vigorously to remove insects. Do not wash the flowers; instead, carefully pluck them from the stems. Place the flowers in a large glass bowl.
- 2. Wash the lemons thoroughly. Slice them into thin rounds. Distribute the lemon slices evenly over the flowers.
- 3. Sprinkle citric acid over the lemon slices. Pour cold water over the mixture.
- 4. Cover the bowl, for example with a plate. Let the mixture infuse for at least 20 hours, preferably 24 hours, at room temperature.
- 5. The next day, strain the liquid into a clean glass bowl through a sieve. Gently press the flowers to extract the juice. Stir the sugar into the juice until it has completely dissolved.
- 6. Cover the bowl again. Let the sweet mixture stand for another day at room temperature.
- 7. Fill the finished syrup into well-rinsed bottles. Seal the bottles and store them in the refrigerator. The syrup will keep for at least one year.
