  1. 1. Pour white wine, an equal amount of water, and citric acid into a large container.
  2. 2. Wash the lemons under hot water.
  3. 3. Slice the lemons into thin rounds.
  4. 4. Rinse the elderflower umbels.
  5. 5. Shake the elderflowers dry.
  6. 6. Add the lemon slices and the elderflowers to the container.
  7. 7. Cover the container, for example with cling film.
  8. 8. Place the container in the refrigerator for 4 to 5 days.
  9. 9. Stir the mixture occasionally during this time.
  10. 10. Strain the liquid into a pot through a sieve.
  11. 11. Add the sugar to the liquid.
  12. 12. Boil the mixture for 10 minutes until a light syrup forms.
  13. 13. Pour the hot syrup into bottles.
  14. 14. Seal the bottles immediately.
  15. 15. Store the syrup in a cool place and enjoy it within at least 6 months.
