Ingredients

Instructions

  1. 1. Shake the elderflower clusters vigorously to remove insects. Pick off any visible debris by hand. Rinse the lemon under hot water. Slice the lemon into thin rounds.
  2. 2. Add the sugar and 1 liter of water to a pot. Heat the mixture slowly while stirring constantly until it boils. Let the syrup simmer gently for about 10 minutes.
  3. 3. Remove the pot from the heat and let the liquid cool down. Add the elderflowers and lemon slices to the cooled syrup. Transfer everything into a large pot or a large bowl.
  4. 4. Cover the pot or bowl. Let the mixture steep for about two days to allow the flavors to infuse.
  5. 5. Strain the syrup through a fine cloth (muslin cloth) before bottling to remove flowers and lemon pieces. Gently squeeze the flowers to extract the remaining liquid.
  6. 6. Pour the strained syrup back into the pot. Heat it again while stirring until it boils.
  7. 7. Pour the hot syrup into a clean, prepared bottle. Seal the bottle tightly and store it in a cool place.
  8. 8. To drink, pour the syrup into a glass. Dilute it with cold water in a ratio of about 1 part syrup to 6 parts water. Stir well and enjoy.
