🍽️ Fresh Elderflower Syrup

Ingredients
- 2 handfuls elderflower
- 1 untreated lemon
- 500 g sugar
Instructions
- 1. Shake the elderflower clusters vigorously to remove insects. Pick off any visible debris by hand. Rinse the lemon under hot water. Slice the lemon into thin rounds.
- 2. Add the sugar and 1 liter of water to a pot. Heat the mixture slowly while stirring constantly until it boils. Let the syrup simmer gently for about 10 minutes.
- 3. Remove the pot from the heat and let the liquid cool down. Add the elderflowers and lemon slices to the cooled syrup. Transfer everything into a large pot or a large bowl.
- 4. Cover the pot or bowl. Let the mixture steep for about two days to allow the flavors to infuse.
- 5. Strain the syrup through a fine cloth (muslin cloth) before bottling to remove flowers and lemon pieces. Gently squeeze the flowers to extract the remaining liquid.
- 6. Pour the strained syrup back into the pot. Heat it again while stirring until it boils.
- 7. Pour the hot syrup into a clean, prepared bottle. Seal the bottle tightly and store it in a cool place.
- 8. To drink, pour the syrup into a glass. Dilute it with cold water in a ratio of about 1 part syrup to 6 parts water. Stir well and enjoy.
