🍽️ Fragrant Elderflower Jelly

Ingredients
- 5 elderflower umbels
- 3 untreated lemons (juice and zest)
- 700 g jam sugar (2:1)
- 1 l water
Instructions
- 1. Place the jars and lids in a large pot.
- 2. Pour boiling water over them until everything is covered.
- 3. Sterilize the jars for ten minutes.
- 4. Carefully remove the jars.
- 5. Place them on a clean cloth and let them drip dry.
- 6. Rinse the lemon under hot water.
- 7. Dry the lemon with a cloth.
- 8. Finely grate the zest of the lemon.
- 9. Squeeze the juice of the lemon.
- 10. Put the elderflowers into a pot.
- 11. Add the lemon juice.
- 12. Add the lemon zest.
- 13. Fill the pot with water.
- 14. Cover the pot.
- 15. Let the mixture steep for one day.
- 16. Strain the liquid through a fine sieve.
- 17. Add the pectin sugar to the clarified liquid.
- 18. Bring the mixture to a boil while stirring.
- 19. Follow the cooking times on the sugar package.
- 20. Drop a teaspoon of the mixture onto a cold plate.
- 21. Check after one minute if the jelly is set.
- 22. Fill the hot jelly into the prepared jars.
- 23. Seal the jars tightly.
- 24. Place the jars upside down for five minutes.
- 25. Place the jars upright again.
- 26. Let the jelly cool down completely.
