  6. 6. Rinse the lemon under hot water.
  7. 7. Dry the lemon with a cloth.
  8. 8. Finely grate the zest of the lemon.
  9. 9. Squeeze the juice of the lemon.
  10. 10. Put the elderflowers into a pot.
  11. 11. Add the lemon juice.
  12. 12. Add the lemon zest.
  13. 13. Fill the pot with water.
  14. 14. Cover the pot.
  15. 15. Let the mixture steep for one day.
  16. 16. Strain the liquid through a fine sieve.
  17. 17. Add the pectin sugar to the clarified liquid.
