🍰 Fluffy Elderflower Pancakes

Ingredients
- 500 ml Milk
- 4 Eggs
- Salt
- 200 g Flour
- 100 g Instant Oat Flakes
- 4 tbsp Oil (for frying)
- 8 washed Elderflower
- Some Sugar (for sprinkling)
Instructions
- 1. Put milk, eggs, a pinch of salt, flour, and oat flakes into a bowl.
- 2. Stir the ingredients with a spoon or whisk until the batter is completely smooth.
- 3. Let the batter rest for 15 minutes so the oat flakes become soft.
- 4. Take a whole elderflower and cut the stem as close to the bloom as possible.
- 5. Heat a pan and add half a tablespoon of oil.
- 6. Take a small dollop of batter and place it in the hot pan.
- 7. Press the prepared elderflower into the center of the batter.
- 8. Cook the pancake on both sides until golden brown.
- 9. Take the finished pancake out of the pan and keep it warm.
- 10. Repeat steps 5 to 9 with the remaining batter.
- 11. Sprinkle the pancakes with sugar or spread elderflower syrup on top.
