  1. 1. Put milk, eggs, a pinch of salt, flour, and oat flakes into a bowl.
  2. 2. Stir the ingredients with a spoon or whisk until the batter is completely smooth.
  3. 3. Let the batter rest for 15 minutes so the oat flakes become soft.
  4. 4. Take a whole elderflower and cut the stem as close to the bloom as possible.
  5. 5. Heat a pan and add half a tablespoon of oil.
  6. 6. Take a small dollop of batter and place it in the hot pan.
  7. 7. Press the prepared elderflower into the center of the batter.
  8. 8. Cook the pancake on both sides until golden brown.
  9. 9. Take the finished pancake out of the pan and keep it warm.
  10. 10. Repeat steps 5 to 9 with the remaining batter.
  11. 11. Sprinkle the pancakes with sugar or spread elderflower syrup on top.
