  1. 1. Gently shake the elderflower umbels and remove any insects or dirt.
  2. 2. Place the flowers in a shallow pot.
  3. 3. Pour water and white wine over them.
  4. 4. Bring the mixture to a boil once.
  5. 5. Remove the pot from the heat.
  6. 6. Cover the pot.
  7. 7. Let the flowers steep for about 4 hours.
  8. 8. Strain the liquid through a fine sieve into a clean pot.
  9. 9. Stir in lemon juice, lemon zest, rose water, and sugar.
  10. 10. Bring everything to a boil again.
  11. 11. Let the mixture bubble vigorously for about 5 minutes.
  12. 12. Fill the mixture into prepared jars.
  13. 13. Seal the jars immediately.
  14. 14. Place the jars upside down on their lids to cool.
