🍽️ Fresh Elderflower Jelly

Ingredients
- 25 elderflower umbels
- 500 ml Riesling
- 500 ml water
- 2 untreated lemons (use the juice and zest)
- rose water
- 1 kg jam sugar (1:1)
Instructions
- 1. Gently shake the elderflower umbels and remove any insects or dirt.
- 2. Place the flowers in a shallow pot.
- 3. Pour water and white wine over them.
- 4. Bring the mixture to a boil once.
- 5. Remove the pot from the heat.
- 6. Cover the pot.
- 7. Let the flowers steep for about 4 hours.
- 8. Strain the liquid through a fine sieve into a clean pot.
- 9. Stir in lemon juice, lemon zest, rose water, and sugar.
- 10. Bring everything to a boil again.
- 11. Let the mixture bubble vigorously for about 5 minutes.
- 12. Fill the mixture into prepared jars.
- 13. Seal the jars immediately.
- 14. Place the jars upside down on their lids to cool.
