🍽️ Hokkien Shrimp Noodles

Ingredients
- 350 g Mie noodles
- 400 g shrimp (headless, with shell)
- 300 g turkey cutlets
- 150 g Venus clams (clams removed from shells)
- 4 spring onions
- 1 stalk celery
- 1 bunch cilantro (20 g each)
- 150 g bean sprouts
- 2 tbsp peanut oil
- 1 tsp toasted sesame oil
- 1 tsp sambal oelek
- 1 tsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp sesame (15 g each)
Instructions
- 1. Pour hot water over the noodles and let them soak until soft, following the package instructions. Alternatively, you can boil the noodles briefly in boiling water.
- 2. Peel the shrimp but leave the tail fin on. Rinse them and pat them dry.
- 3. Rinse the turkey fillets and pat them dry.
- 4. Slice the turkey fillets into thin strips.
- 5. Rinse the mussel meat and pat it dry.
- 6. Clean the spring onions and wash them.
- 7. Cut the spring onions into pieces about 3 centimeters long.
- 8. Wash the celery and slice it thinly.
- 9. Wash the coriander leaves, shake off excess water, and chop them finely.
- 10. Rinse the bean sprouts in a sieve and let them drain well.
- 11. Heat both oils in a wok.
- 12. Add the shrimp, meat, mussels, spring onions, and celery to the wok.
- 13. Stir-fry everything over high heat for 2 to 3 minutes until lightly browned.
- 14. Add the drained noodles, bean sprouts, and coriander.
- 15. Season the dish with sambal oelek, oyster sauce, and soy sauce.
- 16. Sprinkle sesame seeds over the finished noodles and serve.
