  1. 1. Pour hot water over the noodles and let them soak until soft, following the package instructions. Alternatively, you can boil the noodles briefly in boiling water.
  2. 2. Peel the shrimp but leave the tail fin on. Rinse them and pat them dry.
  3. 3. Rinse the turkey fillets and pat them dry.
  4. 4. Slice the turkey fillets into thin strips.
  5. 5. Rinse the mussel meat and pat it dry.
  6. 6. Clean the spring onions and wash them.
  7. 7. Cut the spring onions into pieces about 3 centimeters long.
  8. 8. Wash the celery and slice it thinly.
  9. 9. Wash the coriander leaves, shake off excess water, and chop them finely.
  10. 10. Rinse the bean sprouts in a sieve and let them drain well.
  11. 11. Heat both oils in a wok.
  12. 12. Add the shrimp, meat, mussels, spring onions, and celery to the wok.
  13. 13. Stir-fry everything over high heat for 2 to 3 minutes until lightly browned.
  14. 14. Add the drained noodles, bean sprouts, and coriander.
  15. 15. Season the dish with sambal oelek, oyster sauce, and soy sauce.
  16. 16. Sprinkle sesame seeds over the finished noodles and serve.
